banana caramel sauce
My new breakfast obsession was inspired by a picture on RamshackleGlam of a bowl of oatmeal, with perfectly caramelized slices of bananas on top. Aesthetically chic, totally decadent, and not hard to copy, albeit in a healthier way. This caramel sauce focuses on the sweetness of the banana, and replaces traditional sugar with brown rice syrup. You could definitely sub sugar back in if that’s what you have on hand.
Banana Caramel Sauce (Serves 2)
1 banana
1 teaspoon brown rice syrup
1.5 teaspoons butter
Cinnamon (optional, totally up to you how much. I use about half a teaspoon)
Combine sliced banana, brown rice syrup, and butter in a pan over medium heat. Lower after about 1.5 minutes, or once, the caramel starts bubbling. Let it simmer for 1-2 minutes. Probably amazing on ice cream, insanely good on a big warm bowl of steel cut oats.
